One of the things I’m always interested in is seeing other inspiring women in their unique fields of work, and since I love going to  SodaBottleOpenerWala (Bombay Irani Cafe) in Gurgaon, I kew our first P&B Superwoman had to be none other than the chef behind the restaurant – Anahita Dhondy .

10 am – I usually begin my day with tea and almonds. My morning skincare routine is very basic. I like to use the Body Shop Tea Tree face wash (I have combination skin) for cleansing and Kama Ayurveda natural sun protection as sunscreen. I don’t wear any makeup to work as kitchens tend to be really hot. Also no heels in the kitchen. When I have to go out to a party or something, I prefer using a BB cream that’s lightweight and evens out my skintone.

If I had to describe my work style, I’d say its comfortable yet structured. My work wardrobe is not too formal, I wear jeans + shirts or tights + a comfortable shirt and throw on a scarf. The colours I choose depend on my mood – sometimes monochromes, sometimes not. I like to buy clothes from H&M, Forever 21, Vero Moda and also flea markets. I don’t get a lot of time to shop so I shop a lot while travelling and at airports. I love buying comfortable cotton kurtas from W.

11.30 am – After reaching work, I don my chef uniform – black pants, my chef jacket in black/ white and an apron. I always wear my hair up with fresh flowers in them. Its my signature look. I like to wear wild daisies and carnations in pinks, purples and whites. My first order of business is to go over the ingredients as part of the morning production and get everything ready for the lunch service that runs until 3 pm.

12 noon – I generally have an apple at this time. It gets really busy in the kitchen with lunch service in full swing. I have to stay on my feet in a kitchen where temperatures are always above 40 degrees. This is probably the hardest part of the job.

3 pm – I take a quick lunch break and enjoy a simple fare of dal chawal or roti sabzi.

4-6 pm – This is the time when I sit down with a cup of chai and my laptop. I answer work e-mails, schedule meetings, do HR related work, plan menus etc.

6 pmDaily briefings happen at this time. We discuss a lot of things like what will be our daily specials, menus for parties and recipes. We do a lot of trials and tastings to make sure our customers are served the very best. The best part of my job is when a customer requests to meet the chef/ manager and tells them he enjoyed his meal. It is such a humbling experience when all your hard-work and sweat are rewarded.

7 pm – Dinner service and drinks start and the kitchen is again in a flurry of activity. A busy time with all the chefs doing their best. If you are an aspiring woman chef, I’d like to say that it is NOT easy or glamorous. But if you are passionate about this profession and put in a lot of hard work, you will succeed. Just don’t give up easily. The satisfaction on a customer’s face after eating the food you made makes the toil worth it.

10 pm – The dinner service runs till 11 pm but I try to leave work by 10.30 pm. My night time skincare routine consists of removing the day’s grit from my face and then using a toner. I like to apply The Body Shop Anti Imperfection Daily Solution before sleep. Oh, and I also do a lot of fashion shoots (because a little dress up never hurt nobody) and am a bride-to-be !
